Quick Summertime Treats

Summertime is no time to slave away in the kitchen! Although there are days that I just want to stay at home and experiment with some new recipe, most days I’m eager to get out and have fun with the Scheiblets. With that in mind, here’s some of our favorite Scheibner summertime treats.

Frozen grapes:

Wow! This one is so simple…just wash some firm red and green grapes, lay them on a baking sheet, and freeze them until they’re solid. Then plop them into freezer bags or containers and you’re all set. These are great to take to baseball games or afternoons at the beach.

Here’s a second version, a little sweeter, a little messier, but still fun! Roll the damp grapes in your favorite flavor of jello. (regular or sugar free) Freeze as before and enjoy!

Speaking of jello. Don’t forget Jello Jigglers. Get out the cookie cutters and let your kids have fun cutting out their favorite shapes.

Or just let them squish it-fun times!

Any type of fruit dipped in whipped cream is yummy. To go a step further, mix a jar of marshmallow cream together with a container of Cool-Whip. Cut up some melons, wash some strawberries, and off you go.

Looking for a quick after dinner dessert? We love dump cake for its simplicity and yummy flavor.

In the bottom of a 9 x 5 glass baking dish, mix two cans of cherry pie filling with one small can of crushed pineapple. Sprinkle a package of white cake mix over the top. Then, dot with one stick of butter and bake at 375 until the filling is bubbly and the topping is golden brown. Serve with vanilla ice cream or whipped cream.

Or, better yet, both!

Don’t forget popsicles made in paper cups with juice and chunks of fruit, trail mix filled with your families favorite ingredients, and Muddy Buddies.

Vegetables fresh from the farmer’s market and dipped in ranch dressing will get your children those healthy vitamins they need. Besides, you’ll feel so virtuous watching them eat their veggies!

Have fun, plan trips, and don’t spend too much time in the kitchen. Summer goes quickly and you don’t want to miss a single minute of fun!

Happy snacking,
